Autolyse is the best way to get a light and airy crumb. HOW TO PROOF THE YEAST? If you are using instant yeast, you can skip the proofing step and just mix all of the ingredients together in your mixer bowl. To proof yeast, you mix the yeast with the warm water, milk and honey. Let the mixture rest for 5 to 10 minutes. It should become somewhat foamy or bubbly, which means that your yeast is alive and active. If nothing happens after 10 minutes, your yeast may be dead and you should try again with new yeast. HOW LONG TO KNEAD THE DOUGH After kneading, the dough will be a little sticky and very soft. If the dough is still wet, add one tablespoon of flour at a time, until the dough “lifts” from the sides of the mixing bowl. Try not to add too much flour, though. The dough should be soft without sticking to your hands or the mixing bowl. Pro-Tip 1.Don’t skip the buttering of the top, this helps to make the crust soft and it also creates a bit of a “seal” on the crust that helps prevent the inside of the bread from drying out. 2.While the dough is proofing, grease pan with butter and set them aside. 3.After baking, carefully takes the buns out of the baking pan and let them cool on a rack. These are totally made with 1:1 I.e half of each all-purpose flour and whole wheat flour. Here you can make it only with all-purpose flour ( maida ), if you are a beginner. In these buns, I use milk powder for milky and like the market taste, if u don’t want u can avoid it, but in my opinion it should be mixed for better results. Here, we will use a basic dough recipe. I used to knead the dough with milk only, it’s just for milky sweet flavoured buns. WHOLE WHEAT BREAD 100% / BREAD (EGGLESS )By thepassionateaboutfoodsCraving for bread, here is the solution for bread baking . just follow the process and you will get beautiful bread. The best thing about baking your own bread is the control you have what goes into the making of it. Mix the dry ingredients in one bowl and yeast mixture in another bowl. Add the oil and water mix until combined. Knead for 10 mins or until the dough becomes smooth and elastic. Now cover it in a bowl with cling foil for 45 mins in summer or for 1 hr in winter or till double in size. Turn out the dough from the bowl. Flat it and fold into loaf size and the tucking the end in. Place into a loaf pan. Note: Spray or grease the cling wrap to prevent it from sticking and then cover the pan. Let it rise for 45 mins or double in size. Don’t over proof, otherwise it deflected while baking. Once bread has risen, bake for 25- 30 mins or till top brown. Check the internal bread temperature around 190c . Texture and taste will be different for different flours.
